Cookies with dried coconut

1 1/4 cup flour, shifted
1 cup oatmeal
3/4 cup grated dried coconut
1/2 cup sugar
125 gr. unsalted butter
1 dash salt
2 tbsps honey
1 1/2 tsps water
1/2 tsp soda bicarbonate
Preparation:
We warm the oven in the 170C. In a small pan we warm the butter with the honey over low heat till butter is totally melted. Meanwhile we dissolve the soda bicarbonate in the water. We mix the butter and honey with the water and soda. The mixture will give some froth, it is natural. We take from stove and we leave aside. In a bowl we mix the dry ingredients well. We open a hole in the middle and we pour the liquid. We mix with a wooden spoon or wooden spatula well till mixture has become one. The mixture will not be smooth, it is normal. We cover a pan with grease proof paper. We make balls of the mixture in a distance of 3-4 cm between them but we flatten before putting them on pan. We bake for 10 minutes or until they get golden brown. We take out, leave aside for 2 or 3 minutes and we take from the grease proof paper. Cookies can be stored in tin box for weeks, only if cooled really well.

Chocolate gravy

2 cups milk
1/4 cup flour
1/2 cup sugar
1/4 cup unsweetened cocoa powder
1 tbsp unsalted butter
1/4 tsp salt
Preparation:
In a large saucepan we mix together the sugar, the flour, the cocoa powder and the salt. We set over medium heat and slowly add the milk whisking continuously until mixture becomes smooth. We continue to cook and stir until gravy has thickened but it is less thickened than a pudding, for about 6-8 minutes. We remove from the heat and we add the butter. We stir well until butter has melted completely and has incorporated in the mixture. We serve over biscuits, pancakes or ice cream.

Tomato jam

500 grams. red tomatoes
500 grams. sugar
1/2 lemon juice
1 cinnamon stick
Preparation:
We put the tomatoes in boiling water for 10-15 minutes so that we can peel them off easily afterwards. We cut them in small pieces. We put them to boil with the sugar, the lemon juice and the cinnamon stick stirring all the time till the jam is well set.

Cheesy balls stuffed with olives

20 big olives pitted and/or stuffed with almonds
75 grams grated parmesan or pecorino cheese
60 grams cold butter cut in cubes
100 grams flour
1/2 tsp kayenne pepper
1/4 tsp ground pepper
1 tsp sweet paprika
1 egg beaten with 1 tbsp water
poppy seeds for sprinkling
Preparation:
We dry the olives using kitchen paper. In a bowl (or mixer) we mix the butter, the flour, the pepper, the cheese, the kayenne pepper and the paprika until we get a soft dough (if needed, we add 1 tbsp water). We split the dough in 20 parts, we wrap each olive with a piece of the dough and we form a ball. We put the balls in the fridge for 30 minutes. We cover the surface of the balls with the egg mixture and we sprinkle with the poppy seeds. We bake in preheated oven in the 180C for about 20 minutes or until they get golden. We serve in room temperature.

Easy milk pie with nutella

1 lt milk
1/2 water glass fine semolina
1/2 water glass coarse semoloina
2 eggs
2 tbsps nutella
2 tbsps butter
2 vanilla sachs
Preparation:
We heat the milk in moderate temperature. When it starts getting warm we add the sugar, the vanilla and the semolina stirring well till mixture has grown thick. We let it aside to cool down a bit and then we add the butter and we mix well. We add the nutella, we stir well . We add the eggs one by one and we stir well. We add the eggs in a cool mixture as we don't want the egg to cook due to the heat. We bake in a buttered pan in the 175C for about 45-50 minutes. We let it cool completely and we serve sprinkled with sugar powder.

Keema curry rice

1 Tbsp neutral-flavored oil (vegetable, canola, etc)
1 onion (chopped finely)
1 stalk celery (chopped finely)
½-1 carrot (chopped finely)
2 shiitake mushrooms (chopped finely, see Notes)
500 grams. ground pork
1 cup water (or vegetable/chicken stock)
1 tsp curry powder
2 pieces Japanese curry roux
1 Tbsp ketchup
1 Tbsp Tonkatsu sauce
1 Tbsp unsalted butter (optional)
Freshly ground black pepper
Handful Parmesan cheese (optional)
fried eggs (optional)
Preparation:
In a large skillet, we heat oil over medium high heat. We sauté the onion and the celery until they are nicely golden brown. We add the carrots and the shiitake mushrooms and we mix well with onion and celery. We add the ground pork and break up the meat with wooden spoon till it changes to brownish color. When meat is cooked, we add water or vegetable/chicken broth. Then we add curry powder and bring it to boil. We skim the fat and excess on the surface with spoon. We lower the heat to medium and add curry roux, Ketchup and Tonkatsu sauce. We mix well and simmer without cover for 15 minutes. If necessary, lwe ower the heat or add water during simmering. We add butter and pepper. When butter is all melted we add the cheese in the curry. We serve with rice and a sunny-side up fried egg.
RECIPE NOTES
Shiitake Mushrooms: If we use dried shiitake mushrooms in this recipe instead of fresh ones, we soak in 1 cup of water for 15 minutes. We squeeze the water out and cut the mushrooms. We reserve the liquid (shiitake dashi) and we use it instead of 1 cup water.

Tomato pie filling

1 big tomato cut into wedges
1/2 tspn pepper
1/2 tspn basil
1/2 tspn oregano
1/4 cup chives
1/2 cup mayonnaise
3/4 cup shredded cheddar cheese
3/4 cup shredded mozzarella cheese
Preparation:
We put the tomato wedges in the ready made pie shell or our homemade one. We mix the seasoning together. We sprinkle on top of the tomatoes. In a bowl we combine the cheeses with the mayonnaise. We spread over the seasoned tomatoes. We bake in 200C for 25 minutes.

Greek Leeks and Rice

1 pound leeks sliced in ½ inch wide slices white and pale green parts only
1/3 cup olive oil
2 tablespoons chopped dill
2 teaspoons tomato paste
½ cup medium grain rice uncooked
1 ¼ cup boiling water more as needed
salt and pepper as needed
Lemon for serving
Preparation:
We wash and slice the leeks., we place the leeks in a pot of boiling water and boil for 2-3 minutes. We strain leeks and set aside. In a pot or deep pan, we heat the olive oil on medium low heat and add the leeks and sauté until leeks are soft (about 6-7 minutes). Note: We do not want to brown them. We add the dill and the tomato paste and stir a couple of times, than add the rice and about 1 ¼ cup of hot water. We add salt as needed (I added about ½ a teaspoon) and mix well. We cover the pot with its lid and simmer at low heat for about 20 minutes, until rice is soft. We check regularly and add additional hot water as needed. We turn off the heat and let it sit for 10 minutes with the lid on. We serve as a main course with a few drops of lemon juice and freshly ground pepper along with some feta cheese and fresh bread.

Greek Rice and Cabbage

¼ cup olive oil
1 medium onion diced (about 1 cup or 4 oz or 115 grams)
½ of a small cabbage (about 10 oz or 300 grams sliced, not too thin)
½ tablespoon tomato paste
salt/pepper
About ½ teaspoon cayenne pepper
½ cup medium grain rice (uncooked)
Lemon and parsley for serving
Preparation:
We heat olive oil in a medium pot. We add the onion and sauté until soft about 5-7 minutes. We add the cabbage and mix until cabbage is coated with the olive oil. We heat for 2-3 minutes (stirring) until cabbage has wilted somewhat. Then we add about 1 cup hot water and simmer for 20-30 minutes until cabbage is soft (we can add more water if needed). Once cabbage is soft, we add the tomato paste that has been dissolved in 2-3 tablespoons of water, and ½ teaspoon salt, freshly ground pepper and cayenne pepper and mix. Following we add ½ cup (uncooked) medium grain rice and we stir so that rice is coated with the oil. We add 1 ¼ cup hot water and simmer until rice is almost cooked (about 15 minutes). We add more hot water in small amount if needed. Once rice is ready, but there is still a bit of water left in the pot, remove from heat and keep covered until rest of water is absorbed. Rice should be somewhat creamy.
Note1: We serve with plenty of lemon and sprinkle with parsley.
Note2: To reheat, we may add a bit more water to soften it. We may serve with some feta.
