We pour boiling water over them and leave them to soak for an hour or so.

This seems heavenly! I've heard octopus and calamari become very rubbery when cooked with salt, I think that might be the reason.

What do I do if I can't find self rising flour (not available in my country)? Do I replace it with regular flour and dry yeast or baking powder?
