Easy and quick pomegranate liquor

2 cups pomegranate seeds
2 cups sugar
2 cups brandy
1 cinnamon stick
2 cloves
Preparation:
In a cooking pot we put the pomegranate seeds, the sugar, the brandy, the cinnamon stick and the cloves . As soon as they take one boil, we take the pot away from the stove and we let the mixture sit for 24 hours with lid on. Then we pass from coffee paper filter. Our liquor is ready and we can serve!

Easy Caramel liquor

Option #1
500ml ouzo
1 or 1 1/2 can dulce de leche
Option #2
600gr vodka
2 cans dulce de leche
vanilla
Preparation:
We mix all ingredients in a blender, we pass through a colander and we put in a bottle.
We can keep in the fridge for one month.

Rizogalo (milk & rice pudding)

3/4 cup glutinous rice
1 pinch of salt
2 cups water
1/2 cup sugar
5 cups fresh milk
1/4 tsp powdered mastic
2 full tbsps corn flour
Cinnamon powder for sprinkle
Preparation:
We start by putting the rice, the water and the salt in a cooking pot. We boil in low heat for 10 minutes, until the rice gets soft. We add the milk, the sugar, the mastic and we stir. After the rice has cooked, we dissolve the corn flour in half a cup of cold water and we add in the cooking pot stirring continuousloy. We boil in low heat until it starts thickening. While it is still hot, we share in 6 bowls. We let it boil and then we chill in the fridge. We sprinkle with cinnamon just before we serve.
Secrets for a perfect milk and rice pudding:
- The milk & rice pudding must be creamy and not thick. So, while boiling you need to keep the heat low so that the liquid does not evaporate fast.
- A pinch of salt gives out the mastic and the cinnamon aromas better.
- We can use any kind of milk we like, even vegetable.
- The pudding can be served all year round. In winter we serve it with spoon sweet, in spring we serve it with fresh strawberries and in summer we serve it chilled with lots of cinnamon. We can also add chocolate, if we like. In this case we add 150 grams chocolate in small pieces that we add after we have take the pudding from the heat. We stir till chocolate melts.

Hard-boiled eggs salad

6 hard-boiled eggs
2 spring onions, thinly cut
1/2 bunch parsley, thinly cut
1-2 carrots, grated
Salt
Pepper
Capers or pickled gherkin, cut in small pieces
1/2 cup olive oil
3 tbsps mayonaise
1 tbsp mustard
A little ketchup
Preparation:
In a bowl we combine the olive oil, the mayonaise, the mustard and the ketchup and we mix well. In another bowl we combine the eggs cut in pieces, the spring onions, the parsley, the carrots, the pickled gherkins and salt and pepper to taste. We add the dry ingredients in the sauce, we mix well and we serve with fresh bread.

3-ingredient biscuits

1 can sweet condensed milk
250 gr. butter
500 gr. farina
Optional: chocolate drops, choco powder, vanilla, m&ms, etc
Preparation:
In a bowl we mix the ingredients well till a soft dough has been formed. We can add chocolate drops or choco powder or anything we like as decoration. We make small balls and with hands we make them flat. We bake in preheated oven in the 180C for 16-18 minutes.

Easy pizza dough (pizza hut type)

330ml sprite
330ml lukewarm water
1 kg flour
1 sachet baker's yeast
1/2 to 1 cup oil
Preparation:
We mix the ingredients till the dough has been formed. We cover with wrap film and we let the dough rest and rise. When it has risen, we divide in parts, we spread in a baking tin and we bake immediately.

Honey cream (recipe from the island of Crete)

350 grams honey
720 grams water
10 tbsps corn flour
1 cinnamon stick
Cinnamon powder (optional)
Preparation:
We dissolve the corn flour in a bit of water and we boil all the ingredients, stirring continuously, till mixture thickens. We share in bowls and put in the fridge till mixture gets firm. We sprinkle with cinnamon and we enjoy.

Easy orange cake

2 big orange, with their peel
3 eggs
1 1/2 cup farina
1 cup brown sugar
180 grams melted butter
1 1/2 tsp baking powder
Preparation:
We wash the oranges well and then we cut them in small pieces with their peel. We put them in a blender so that we have an orange puree. In a bowl we mix the orange puree with the sugar and slowly we add the farina. Then we add the 3 eggs, the baking powder, the melted butter and we mix well. We put in greased pan and we bake in preheated oven in the 180C for about 40 minutes.

For the Cake
2 cups flour
1 cup oil
1 cup sugar
1 cup evaporated milk
7 tbsps cocoa powder
2 tsps baking powder
1 tbsp vinegar
1 tsp soda bicarbonate
2 vanilla dashes
1 salt dash
5 eggs
For the Syrup:
2 cups water
2 cups sugar
For the frosting:
250 grams couverture chocolate
250 grams creme fraiche
2 tbsps butter
Preparation:
In a bowl we put all the ingredients. Using a wooden spatula we mix well. We cover the bottom of a cooking pan with grease proof paper and empty the bowl. We bake in the 180C for 35 minutes. Since all stoves differ we check with a stick if the cake has been done. Meanwhile we make a syrup warming the mixture of water/sugar for 4 minutes stirring well to have the sugar dissolved. We slowly pour over the cake when both are hot. When it has got cooler we cover with the frosting we have made by melting the choco and the butter in the creme fraiche.
