Chicken with potatoes and beer in the oven

4 chicken legs with the thighs
1 kg potatoes
1 tbsp mustard
1 tbsp honey
2/3 of a 330 ml beer can
1/2 tbsp dry thyme
1 tbsp garlic powder
olive oil
salt and pepper to taste
Preparation:
We peel and wash the potatoes. We cut them in 2-3cm slices and we put them in a baking pot with the chicken. We salt and pepper chicken and potatoes. We Καθαρίζουμε και πλένουμε το κοτόπουλο και τις πατάτες. We sprinkle with the dry thyme. In a bowl, we mix the beer, the mustard, the olive oil and the garlic and we pour over the chicken and the potatoes. We bake in medium heat till potatoes are soft and chicken is fully cooked.

Spaghetti with lentils bolognese

500 grams spaghetti No. 6
1 tbsp olive oil
1 onion, thinly diced
2 carrots, thinly diced
2 cloves garlic, thinly diced
200 grams lentils
400 gram canned tomatoes
2 cups (500ml) vegetables broth
2 tbsp tomato paste
salt to taste
pepper to taste
feta cheese, crashed (optional)
Preparation:
In a big cooking pot we heat the olive oil, on medium heat. We add the onion, the carrot, the garlic and we cook for 4 minutes until the vegetables soften. We add the lentils, the tomato, the vegetables broth, the tomato paste, salt and pepper. We increase the heat to higher and let them get a big boil. We lower the temperature to medium and we continue cooking for about 20 minutes until the sauce has thickened. Meanwhile we have made the spaghetti as per the instructions. We have them drained and put back in the cooking pot. We serve the spaghetti with the lentils sauce and crashed feta (optional).

Cinnamon Mocha Coffee

1/2 cup ground dark roast coffee
1 tbsp ground cinnamon
1/4 tsp ground nutmeg
5 cups water
1 cup milk
1/3 cup chocolate syrup
1/4 cup packed brown sugar
1 tsp vanilla
whipped cream (optional)
Preparation:
Combine coffee grounds, cinamon and nutmeg. Pour into coffee filter of drip coffeemaker. Add water, brew as usual. In a large saucepan, add milk, chocolate syrup and brown sugar. Cover and cook on low until sugar dissolves, stirring occasionally. Stir in vanilla and brewed coffee. Ladle into mugs, garnish with whipped cream, if you like. You may add shaved chocolate or a cinnamon stick. During Christmas you may add candy canes or broken pieces/candy cane on whipped cream.
Makes 8 servings.

Creamy green beans casserole

For the onions:
2 tablespoons butter2 large yellow onions, thinly sliced lengthwise
salt and ground black pepper to taste
1 tablespoon sherry vinegar
For the white sauce:
2 tablespoons butter
2 1/2 tablespoons all-purpose flour
2 1/2 cups milk
1 pinch ground nutmeg
cayenne pepper to taste (optional)
1/4 teaspoon ground thyme
For the topping:
2 tablespoons melted butter
2/3 cup panko bread crumbs
2 pounds fresh green beans, trimmed
4 ounces shredded Gruyere cheese, divided
1/3 cup grated Parmesan cheese
Preparation:
Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch casserole dish. Heat 2 tablespoons of butter in a large skillet over medium heat. Stir the onions into the pan; cook and stir until very soft and golden brown, about 15 minutes. Stir in sherry vinegar. Transfer to a small bowl, and reserve. In the same skillet, melt 2 more tablespoons butter. Whisk in 2 tablespoons flour. Stirring constantly, cook over medium heat until the flour smells like baked pie crust, about 3 minutes. Slowly whisk in milk, about 1/2 cup at a time, then whisk in nutmeg, cayenne pepper, and thyme. Bring to simmer, and cook until thickened, whisking constantly, 3 more minutes. Transfer to a bowl and reserve. Melt remaining 2 tablespoons butter in clean skillet; stir in panko until all crumbs are coated; reserve. Bring a large saucepan of salted water to a boil over medium heat, and boil beans until bright green and crisp but not raw tasting, 3 to 4 minutes. Drain very well. Spoon half of the caramelized onions into the prepared casserole dish; top with green beans. Season with salt and black pepper. Spread reserved white sauce over the green beans; sprinkle with half of the Gruyere cheese. Top with the rest of the onions, and use the back of a spoon to push onions down into sauce and cheese. Top with the buttered panko crumbs, the remaining Gruyere, and Parmesan cheese.
Bake in the preheated oven until hot throughout and lightly browned, about 30 minutes. Let sit 10 minutes before serving.

American pumpkin pie

Ingredients:
1 (15 ounce) can pureed pumpkin
1 (14 ounce) can Sweetened Condensed Milk
2 large eggs, slightly whisked
1 teaspoon ground cinnamon (rounded)
¼ teaspoon ground cloves
½ teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon salt
1 (9 inch) pie crust (bonus points for homemade
Preparation:
Preheat oven to 425F (220C). In a small saucepan, heat pumpkin, spices and salt over low heat. The pour into another bowl to cool to room temperature. [This step is optional, but I think it makes the canned pumpkin taste closer to fresh pureed pumpkin.] Whisk all ingredients except piecrust together in a medium bowl until combined. Make sure there are no streaks of egg white because those will show up in the final product! Pour into crust and bake at 425F (220C) for 15 minutes. Reduce heat to 350F (180C) and continue baking 35 to 40 minutes or until a sharp knife inserted 1 inch from the center comes out clean. If you don't want to poke your pie, which will cause it to crack as it cools, you can jiggle it. It is done when only the center (1 inch diameter) jiggles. The pumpkin pie will set perfectly if allowed to cool completely prior to cutting. Refrigerate in a sealed container or covered with foil. It will also keep for several days at room temperature if you prefer.
Notes: Note: This recipe makes 1 regular 9" pie. If you have a deep-dish pie pan or a slightly larger pie dish, I would make 1.5 times this recipe. You will need to cook the pie closer to 50 minutes.

Grape spoon sweet (stafyli glyko)

1 kg of seedless grapes
1 kg of sugar
2 cups of water
2 tablespoons of lemon juice
2 cinnamon sticks
Powdered vanilla or a sprig of ginger for garnish
Preparations:
We wash the grapes thoroughly and we drain them in a strainer. We boil the water and sugar in a saucepan for 4 minutes. Then we add the grapes and cook for another 10 minutes. We turn off the heat and let the mixture rest for 4 hours. We turn the heat back on and simmer until the syrup thickens. We add the lemon juice, stir and remove from the heat. We take a spoonful and let it cool on a plate to sample. The mixture is ready when it becomes a viscous syrup with a nice, even honey colour.
While it is still hot, we transfer the sweet to sterilized jars, we place the cap on tightly and turn upside down for few minutes.

Cream cheese stuffed lychees

600 grams (2 cans) lychees,
250 grams cream cheese
1 tbsp sherry
Dash of salt
3 tbsp chopped macadamia nuts
2 tbsp chopped crystalized ginger
Preparation:
We drain lychees. In the small bowl of electric mixer, we beat the cream cheese with sherry and salt until mixture is smooth. We stir in the remaining ingredients. We stuff lychees. Makes about 4 dozen.
For a Hawaiian treat, these are hard to beat.

Easy 3-step biscuits/bagel recipe

1 cup self rising flour
1 cup greek yogurt
1 cup 4-blend cheeses
Preparation:
We mix ingredients well. We form in balls and bake in 170C for 12-15 minutes.

Tagliatelle with eggplant sauce

500 grams tagliatelle, cooked as per the time given in package
7-8 eggplants, sliced and griled
1 big onion, cut in small cubes
3-4 cloves garlic, cut in small pieces
1 small glass of white wine
400 grams canned tomatoes
250 grams fresh cream
400 grams various grated cheeses
1/2 tsp sugar
a pinch of cinnamon powder
a pinch of nutmeg powder
a pinch of basil
salt and pepper
Preparation:
We make a tomato sauce with the onion, the garlic, the tomato, the wine, the sugar, the cinnamon and the nutmeg, the basil, the parsley and the salt and pepper. When the sauce is ready, we add the grilled eggplants, the fresh cream, half of the cheeses and we mix in the boiled tagliatelle. We cover with the remaining grated cheeses and we bake for 30 minutes in the 200C.

from teppybaka on 08/13/2019 07:03 PMthis was a lot of fun to do, thank you for this! ^_^ ALSO, to properly answer Part Three Question #3, for an open air concert, or almost any concert really, i'd probably stick with jeans and sneakers or boots with a t-shirt (or a tank top if it's really hot weather, which where i live is almost all the time xD). for certain special concerts (like for the rare occassions that Japanese bands come tour North America), i might do something a little more themed or extra, such as for the recent North American tour that the GazettE did i decided to bring my rhinestone morning coat, and since it was in New York City and the weather was a lot cooler, it was rather appropriate xD
