Scrambled eggs with tomatoes (Kayianas or Strapatsada)

2 onions: finely chopped
1/2 cup olive oil
600 gr. ripe tomatoes
8 eggs
150 gr feta cheese, crumbled
1 green pepper cut into thin slices
salt
pepper
1/4 teaspoon sugar
Preparation:
We heat the oil in a deep frying pan and sauté the onions for 6-7 minutes until wilted. Then, we peel the tomatoes, remove the seeds and the excess juices, chop and put in the pan, together with salt and pepper and a bit of sugar. We cook over a low heat for 20-25 minutes until the juices have completely evaporated and then add the eggs that we have previously whisked. We add salt and pepper. We continue to cook, stirring all the while for 4-5 minutes until the eggs are cooked. We add the crumbled feta cheese and the slices of green pepper. We can serve it on toasted bread or rusks.
Tips
Kayianas is also called strapatsada... No matter how you we call it though, it is still one of the easiest and humble gourmet dishes with eggs, fresh tomato and feta cheese.

Green beans and potatoes in tomato sauce

1kg fresh green beans cleaned of their fibers (you can use deep frozen ,too)
2 medium potatoes, peeled
1 large onion, grated
500 grams ripe tomatoes
half a bunch parsley, finely chopped
5 tablespoons olive oil
half a teaspoon garlic powder
half a teaspoon sugar
Preparation:
We thoroughly wash the cleaned beans. We put them in a cooking pot and we add the potatoes quartered, the garlic powder, the grated onion, the tomatoes cut in small squares, the chopped parsley, the salt and pepper, the sugar and the oil. We add water so as to cover the green beans, we stir gently and we put the lid on the cooking pot. We cook over medium heat for about 1 hour or until they have absorbed the water and the sauce has stayed with its oil only. We serve with feta cheese and fresh bread for those who love bread.

Greek salad

2 tomatoes, riped but firm, cut in big cubes
1 cucumber, cut in slices
1 bell pepper, cut in slices (you may use any color)
1 onion, cut in slices
Kalamata olives
Capers
100 gram feta (or white) cheese, cut in cubes,
Vinegar
Olive oil
Oregano
Salt
Pepper
Preparation:
We wash and drain the vegetables. In a bowl, we put the tomatoes, cut. We add the cucumber, the bell pepper, the onion, the olives, the capers and the feta cheese. We add the salt and the pepper, the olive oil, the vinegar and the oregano. We toss and we serve with fresh bread.

Santorini tomato fritters (Tomatokeftedes)

1 1/2 cup of tomatoes (3-4 tomatoes), finely chopped
100gr feta cheese, smashed
1/2 of a cup red onion (1 large onion), grated
1 tbsp parsley, finely chopped
1 tbsps fresh spearmint, finely chopped
1 tsp dried oregano
1/2 cup flour
1 tsp baking powder
salt and freshly ground paper
oil for frying
Preparation:
We cut the tomatoes into 4 pieces and with a spoon we remove the flesh. We chop the flesh of the tomatoes into small cubes and place in a colander with some salt. We leave them for 30 minutes. Into a bowl, we combine the chopped tomatoes, the onions and mix with a spoon; we add the herbs and the feta cheese smashed with a fork. In a separate bowl, we mix the flour with the baking powder. We add the four mixture to the tomato mixture, whilst stirring with a spoon, until the ingredients are combined and the mixture is firm enough to make the balls. We add a little more flour, if needed. We put in the fridge for 30 minutes. In a pan we add enough oil to cover the bottom and we heat the oil into medium-high heat. We dip a tablespoon in some water and we spoon out some of the mixture into the hot oil. We repeat this procedure until the surface of the pan is comfortably filled. We should dip the spoon in the water every time so that the dough doesn't stick on it. We fry the tomatokeftedes for about 2-3 minutes on each side until nicely colored. We place them on paper towel to absorb the extra olive oil. Enjoy with some crusted bread, yogurt and a sip of ouzo!

Maniatika spaghetti

500gr. spaghetti No. 5 or 6
350gr. grated cheese
100ml olive oil and a little more for the frying of the eggs
2 tablespoons butter
1 or 2 eggs per serving
pepper, freshly grated
salt
Preparation:
We make the spaghetti as per the instructions. At the same time, in a big pan we warm the olive oil and the butter in medium to high heat. We add the butter/oil mixture to the spaghetti and add the grated cheese. We stir well to have all evenly mixed. We fry the eggs (sunny side up) in a little olive oil. We serve the spaghetti in a plate and on top we put one or two eggs. If we want we can add fresh pepper and extra grated cheese. Before serving, we break the egg yolk so that it runs inside the spaghetti. This quantity serves 4 persons.
