Chicken liver

Ingredients:
500g chicken liver
1 tbsp olive oil
1 tbsp lemon juice
½ tsp pepper
¼ – ½ tsp salt
Parsley, finely chopped
Garlic powder (optional)
Extra oil for 'frying'

 

Preparation:
We heat the oil in a grill pan or a frying pan. We add the chicken liver and we cook for about 5 minutes or until slightly 'burned' from both sides. We garnish with finely chopped parsley and/or garlic powder and we squeeze some lemon juice. We serve with fresh bread or white rice or mashed potatoes.

Saganaki cheese

Ingredients:
120 grams cheese, gruyere or other hard cheese that can be grated, NOT cream cheese
50 grams flour
oil for the frying
1 lemon

 

Preparation:
In order to make this recipe, we must cut a square or oblong piece of cheese in a 2cm thickness. We need to make sure it is thick enought so that it does not melt in the skillet or the frying pan. We dip the cheese in cold water and then we pass it from flour to fully cover all sides. In a small frying pan, we put enough oil to make sure half of our saganaki is covered (NOT cover it totally like it does when we fry potatoes). The heat is strong. We fry the saganaki till it turns golden/light brownish and then we turn to the other side for an equal result. We serve with lots of lemon while it is still hot.

Black eyed beans salad

Ingredients:
200 grams black eyed beans
2 tomatoes, cut in small cubes
1 yellow pepper, cut in small cubes
1 red pepper, cut in cubes
1/2 bunch parsley, finely chopped
1 green onion, finely chopped
1 onion, finely chopped
Salt
Pepper
2 tablespoons balsamic vinegar or apple vinegar
3 tablespoons olive oil
kalamata olives

 

Preparation:
We rinse the black eyed beans and put them in a cooking pot with cold water.  We bring to boil for 5 minutes. We throw away the water of the first boil and we use fresh water to boil for 30-40 minutes approximately until they get soft but they remain whole. We drain them and we let them cool. In a bowl we put our ingredients, black eyed beans, tomatoes, peppers, parsley, onions and we toss well adding salt and pepper to taste. We add the olives, the oil and the vinegar and we toss well. We serve with fresh bread.

Lentils salad

Ingredients:
200-250 grams. lentils
1 onion, finely chopped
1 bunch parsley, finely chopped
1 green pepper, cut in small cubes
1 cucumber, cut in small cubes
1 carrot, cut in small cubes
1 tomato, without the seeds, cut in small cubes
4 tablespoons olive oil
3 tablespoons vinegar
Salt
Pepper

 

Preparation:
We boil the lentils till they are soft but firm. We drain them and we let them cool. We put them in a basin and we add the rest of the ingredients. We toss lightly, we empty the mixture in a salad bowl and we serve.

Lentils white soup

Ingredients:
500gr. small lentils
1 medium onion, finely chopped
2 garlic cloves, finely chopped
1/2 cup olive oil
1-2 bay leaves
Salt
Vinegar, as per wish

 

Preparation:
We rinse and drain the lentils. In a cooking pot, we put 6 cups water, the lentils, the onion, the garlic and the bay leaves. We let them boil for about 30 minutes. We add the salt and the oil and simmer for about 15 more minutes or till the soup gets thick. We serve adding some vinegar.

Re: Melon salad

Indeed!!!!  I can't stop eating both salads.  But, sensei has told me that melon contains way to much sugar and feta contains too much salt so this salad is actually not good for weight loss diet.

Lentils red soup

Ingredients:
500gram small lentils
1/2 cup olive oil
2 onions, finely chopped
2 small leeks, finely chopped
2 garlic cloves, finely chopped
2 carrots, shredded or finely chopped
2 medium tomatoes, finely chopped (fresh or canned)
2 tbsps tomato paste
2 bay leaves
Balsamic vinegar
Salt
Pepper
Olives or feta cheese and/or fresh bread for the serving

Preparation
We rinse the lentils well and we put them to boil in lots of water for 5 minutes. We drain and keep them aside. We heat 3-4 teaspoons of the olive oil quantity and we sautee the onion and the leek for 3 minutes. We add the garlic and the carrot and we stir so that oil gets everywhere. We add the tomato paste, the lentils, the tomatoes, the bay leaves and cover with hot water. We put the lid on the pot and leave to boil for about 25 minutes in low heat, the ingredients must mix well and get soft. Towards the end we add salt and pepper and we add the rest of the olive oil slowly, stirring with a wooden spoon over low heat. At the end we add 2 or more tablespoons of balsamic vinegar and we taste on salt and pepper.

Meat balls in white sauce (yiouvarlakia)

Meatballs:

Ingredients

500 grams minced beef,
1 cup of uncooked rice,
1/4 cup of finelly chopped parsley,
1 big finelly chopped onion,
1 egg,
1 cup of grated cheese,
2 tbsps olive oil,
2 big yellow lemons,
2 carrots in cubes,
2 potatoes cut in cubes,
2 zucchini cut in cubes,
Salt and pepper for taste

 

Preparation:

To prepare these Greek meatballs, we start by making the meatballs (yiouvarlakia). We place all the minced meat, the rice, the eggs, the parsley, the onion, the grated cheese, the olive oil, the salt and the pepper in a basin and we knead the mixture well to make it smooth. We leave the mixture to rest in the fridge for 15 minutes. We form the meatballs and set them aside.

Then, in a cooking pot, we add 3 cups of water and let it boil. When water has boiled we lower the heat and we put the meatballs inside one by one, adding the cubed carrots, the cubed potatoes and the cubed zucchini, avoiding to stir. We cook for about 20-30 minute. (the water must cover the meatballs so they are cooked properly). When almost done, we add the squeezed lemon juice, turn off the heat and let it simmer.
